This month we bring to you a coffee that really is everything we look for in a coffee.
Grace Morales, Ecuador

We have purchased from the Morales family three times. For the last two years, we have bought Grace's coffee, particularly the Typica variety, from her farm. The Typica variety is pretty common in Ecuador and is a more nuanced and complex variety than the other common varieties.
Grace and her brother, Galo, both acquired the farm from their father, who inherited it from his father. The next-generation element of this coffee is of huge value to us as it proves that the farm is an economically sustainable business for future generations. It feels good to know this.
The Morales farm has a wealth of knowledge through its years of coffee production. It also has, over the years, acquired specialty coffee processing equipment that makes the coffee's consistency and grading a notch above what we would typically see on other farms. This helps in creating better tasting coffee, but the accuracy is also a safeguard in ensuring coffee is processed and dried correctly, which in turn helps protect the income of the Morales family.
We love the flavour profile of Grace's coffee. A beautiful and vibrant acidity with a well-balanced sweetness. A classic Latin America coffee profile, refined and done so well.
