Jairo Arcila, Colombia
Jairo is a multi-generational farmer and is the father of Felipe and Carlos, the brothers who own Cofinet, the importer/exporter in Colombia. The family have an abundance of knowledge when it comes to coffee farming and processing. We love the type of processing that Jairo has chosen for this Tabi variety. He used a longer fermentation time to bring up the more profound purple/red fruit tones and to help lower the chances of the more vegetal tones that can be found in the Tabi variety. We think that his knowledge of fermentation in processing helps him achieve coffee profiles like this.
His son Felipe has also been experimenting and documenting how different varieties react to fermentation on the farm, with both of them being able to share and feed off each other's knowledge and improve the methods used. We are also aware that they are sharing all their experiences with other local farmers, helping them achieve greater quality coffees and reach new markets, where customers will pay higher premiums. This kind of openness is why we love Jairo and his family.
We are honoured to work with their family and found it extra nice that we were able to share our final product with him, after his son Carlos, who recently visited us here in Sydney, was able to bring back a bag to their hometown in Quindío, Colombia. He, like you, got to enjoy the coffee at the exact same time, making the whole subscription experience for us, as roasters, very heartwarming.
