Kibingo, Burundi
For some of you who have been on the subscription a while, you may recall Kibingo was featured last year in June. This is once again a testament to how consistently good coffee from Burundi is. We tasted this lot 'blind' and chose to purchase it again amongst a sea of other samples.
We have always been huge fans of coffee from Burundi. There must be something about the air there that makes the coffee a little magical. Burundi and Rwanda are both relatively new to producing coffee and even more so, new to the specialty segment.
The coffee is almost always a red bourbon and done in a washed-processed style with a longer than usual dry-fermentation (i.e. the seeds sitting in piles/tanks with the fruit still on it, but the skin removed). We find there is a little bit of fermentation that happens in this process, which results in the profile of the coffee intensifying.
While this is our second time having Kibingo in our line-up, we have used the exporter, Green Co, for many years. They have great dedication to the development of the producers and their understanding of coffee's role in lighting up the local communities.
Josh, an insanely valued Made of Many member and roaster, was tasked with the duty of putting this coffee through its paces before choosing a roast profile to move forward with. We have tasted now many different versions of Kibingo, and are sharing with you the most vibrant and clean version we could achieve.
