Pedro Padilla, Peru — December 2025

DECEMBER SUBSCRIPTION

Hello,

I am so sorry for the delay. With the year wrapping up and the crazy season, I got this one away a lot later than I wanted. Happy holidays!

Pedro Padilla, Peru

It is no wonder that Peru — home to vast biodiversity including the Amazon, the Andes, and a coastline — is also home to some of the most incredible coffees.

The Peruvian coffee scene has been rapidly developing over the past few years. With the country's increased focus on logistics, infrastructure, and a growing demand for high-grade Arabica coffee, Peruvian coffee farmers have been able to increase their trade in the specialty market and secure interest from many small, quality-focused roasters.

We are keeping a close eye on coffee from Peru and are looking for long-term partnerships with producers. Producers like Pedro are exactly the type we want to align with — small-scale but very intentional, placing an emphasis on quality over quantity.

We have bought the Bourbon variety from him, which has been rumoured to have mutated and created the Marshall variety. While we are told that many coffees coming out of Peru are labelled as Bourbon, there is a developing understanding of the Marshall variety and its correct identification. Given that this lot from Pedro has distinct anatomical differences from Bourbon — which, along with its flavours, leads us to believe it may be classified as Marshall in the coming years.

This variety should be closely monitored, as its attractive tropical profile and apparent disease resistance make it an excellent option for both farmers and coffee buyers.

Take care,
Ben
