Rocket Flower, Colombia

A coffee that is more an experience of process and curiosity than one of variety and terroir expression. Huver Castillo, the producer of Rocket Flower, has been playing around with enzymes, fermentation accelerants, and difficult bacteria inhibitors. He has been using the humble, yet consistent, Caturra variety from his farm. Caturra makes a great base because it has a generally clean and balanced profile, which Huver has been trying to push toward various different outcomes.

I haven't personally chatted with Huver, but Forest Coffee, the importer, has relayed that Huver is driven by the idea of "what could my coffee taste like?" While Made of Many prefers to showcase coffees that are less process-driven, we are a people-first coffee company. When we hear of producers pushing coffee in a curious and playful way, it is something we can really get behind, and we love getting our hands on these coffees from time to time.

The goal of this coffee is simple: to exaggerate flowers. Huver processed the coffee with hop flowers and a yeast. The yeast he used is helpful in producing citric, tropical-like ester compounds. First, there is a whole cherry fermentation, then the coffee is fully washed, and during this stage of fermentation, the yeast and hop flowers are added.

In the cup, the idea becomes very clear. There are undeniable notes of jasmine, and also bergamot's citric nature. What we particularly love is that the coffee performs and has taste characteristics that are more consistent with a washed coffee than a coffee of extended anaerobic processing. It has a beautiful clarity and sweetness, making it very pleasant and tea-like.
