Yabitu Tume, Ethiopia

We thought it would be nice to start the year with a lighter, more delicate coffee. At Made of Many, we've always had a soft spot for washed-processed Ethiopian coffees, and this one is no exception.

This particular lot was selected by our partners at Trabocca. I (Ben) help choose the coffees they import into Australia, and this profile from the Guji region is one of my favourites. It's juicy, with notes of stone fruit, and carries the clean, crisp characteristics of high-altitude Ethiopian coffee. The region's natural sweetness allows us to roast it lightly — highlighting the bright fruit tones and transparency, without tipping into sharp acidity. We've enjoyed making faster filter brews to savour the delicate notes — or letting it brew longer to explore its rounder, sweeter side.
