Cascara
is the dried skin and pulp of the coffee fruit — the layer that surrounds the seed we normally roast. Traditionally discarded, this fruit carries its own story: sweet, floral, and quietly complex. Ours is sourced through Caravela with the same care as our coffees. The cherries come from the Tolima region, grown by a collective of local smallholders. Utilising cascara is a meaningful way to add value for producers.
