Chelchele is now a very well-known washing station, acquiring its notoriety for its clean processing and distinct Yirgacheffe flavour profile. We carefully selected this small amount that was contracted to Trabocca, our trade partners. It is a very clean, natural-processed coffee due to the cherries being laid in thin layers and left to slowly dry on raised African beds. This ensures good airflow and minimizes the chance of bad fermentation. While some poorly executed natural-processed coffees lack acidity, this type of drying helps preserve the acidity and results in a much more complex coffee.
