We have been trying to find a Guatemalan coffee that is steady in the way it tastes and is paying the contributing farmers the most for their coffee. The best way for us to do that is through a small collective of 18 small-holder farmers. That way the coffee can be purchased completely and split into different quality segments. The farmers are paid for their entire crop and it isn't cherry-picked by roasters that leave them short-changed in the end.
We bought the AAA quality grade which is show amazing acidity express and clarity. This particular lot is only made up of 3 producers and 2 varieties. It is a more focused profile with great acidity expression and clarity. It has the classic ripe fruitiness we know and love about coffee from the Huehuetenango region.
