Flavour Notes - Concord grape, port & elderberry

Elias, like many other farmers in the region, is indigenous to the area. He shares a deep connection to his land and his roots. We picked this particular lot, a Colombia variety, for its intensity and dense fruit-forward profile. Elias processes this coffee differently than most, leaning into heavy fermentation to create a distinct coffee character. It is cherry-fermented for 24 hours, then depulped and dry-fermented for five days. The coffee is deep into fermentation by the time he washes it and spreads it out to dry. 

Espresso Recipe: 1:3 ratio
In: 20 grams dry dose
Out:  60 grams beverage weight output
Time: Contact time of 26+ seconds

Filter Recipe: 1:16.5 ratio 
In: 20 grams dry coffee
Out: 330 grams brewing water
Time: 2:45-3:15 minutes
