We classically source coffees that are clean and vibrant, and we steer away from fermented, over-ripe fruit flavours. Variety is, after all, the spice of life!\u003cbr\u003e\u003cbr\u003eThis particular coffee is on the border of ripe to over-ripe flavours. It has really beautiful, intense fruits with a milder acidity profile and a pleasant caramely finish. This ripe fruit characteristic is pretty typical of the Huehuetenango region in Guatemala. In different microclimates, during the drying of the coffee seeds, there is microbial activity that can vary.
