Flavour Notes - Purple grape, rose & a creamy mouthfeel

This is the first Natural processed coffee that we have ever offered.

The coffee is dried as whole fruit, which makes it prone to producing mold and other undesirable fermented flavours. To ensure consistent drying and over-fermentation, the coffee cherries are turned regularly. Chiri is located on the eastern side of Sidamo, Hora Ela. This heirloom varietal coffee is grown by 650 small-holders families. It was graded as a Grade 1, which helps in delivering creamy, clean, deep winey and perfume-like flavours.

 

Espresso Recipe: 1:3 ratio
In: 20 grams dry dose
Out:  60 grams beverage weight output
Time: Contact time of 26+ seconds

Filter Recipe: 1:16.5 ratio 
In: 20 grams dry coffee
Out: 330 grams brewing water
Time: 2:45-3:15 minutes
