Amilcar is the coffee producer of La Benedición, their farm in Huehuetenango. This area of Guatemala is known for its complex fruit driven profiles. It seems to stem from the unique microclimate and the high altitude at which the coffee is grown. Because of the difficult location (far from central coffee processing stations) we see a lot of the farmers in this region processes their coffee cherries on their own farm, not only is this more profitable for them, but it also allows them to have control over a very important part of the process.
The longer wet-fermentation allows for a sweeter more jammy style of coffee. It is still very clean as the processing is carefully carried out and the picking of only ripe cherries is employed.
