Edwin Noreña is a producer who works to fulfil his coffee's potential through Campo Hermoso, a processing facility that utilises advanced fermentation techniques. As an agro-engineer by education, he views coffee through a unique lens, treating it as a complex ingredient. This lot is a Sudan Rume variety is grown at 1,650 masl. It is washed after undergoing a "Mosto" fermentation—a process using a yeast starter made from the coffee's own fruit pulp—and is then slowly dried over 10+ days.
