Anaerobic fermentation happens without oxygen. This means that after the de-pulping of the coffee it was placed in an air-tight container and monitored as it ferments. Diego controls this process in order to deliver the most speculator coffees. He calls this style "Frutos Rojos", meaning red fruit. It is hardly your typical Colombian coffee. It is a very unique experience.
