Halo Beriti washing station serves about 750 small-holder farmers. Each farmer owns a little bit of land, on which they harvest coffee. The coffee is brought to the washing station as whole cherry and is paid for by weight. Coffee is becoming more traceable in Ethiopia and we are beginning to see smaller, more segmented pieces of the market pop up, which means producers can get recognised and hopefully paid appropriately for producing better coffee and it's quality can be identified more closely. their This coffee is typical of the Yirgacheffe region but with more berry tones and a little less florality. It is grown at altitude with great biodiversity, this, along with long wet fermentation times, makes a complex and flavour coffee experience. The coffees from Ethiopia are known to have great product stability due to the slow drying process on raised beds.
