Flavour Notes - Soft lemon, persimmon & caramel

We have been saving this coffee to give our line-up a bit of variety. We classically source coffees that are clean and vibrant, and we steer away from fermented, over-ripe fruit flavours. Variety is, after all, the spice of life!

This particular coffee is on the border of ripe to over-ripe flavours. It has really beautiful, intense fruits with a milder acidity profile and a pleasant caramely finish. This ripe fruit characteristic is pretty typical of the Huehuetenango region in Guatemala. In different microclimates, during the drying of the coffee seeds, there is microbial activity that can vary. This is thought to make way for some of the variety of flavour we see in different regions.

In: 20 grams dry dose
Out:  56 grams beverage weight output
Time: Contact time of 24+ seconds

Filter Recipe: 1:15 ratio 
In: 20 grams dry coffee
Out: 300 grams brewing water
Time: 2:45-3:15 minutes
